Call me a pretentious git (and I’m sure many people have), but I’m not even sure I recognise American-style “cheddar” as real cheddar. And that orange colour? What the hell?

Apparently you can make American cheddar by taking a block of Colby, melting it down, adding gelatine and food colouring, and pouring it into a mold to set.
Personally, that sounds like a waste of good Colby.
